This is a good basic low carb cookie recipe for further experimentation. After all, you can add spices to taste and make gingerbread cookies, or you can buy a beautiful rolling pin with pattern prints or molds and cut out beautiful delicacies for a child. I found the recipe on the LCHF.ru Instagram account and I wanted to give him a test drive for a long time, but the recipe involves psyllium, which I haven’t had for a long time, and when it appeared, then it was time to bake this fragrant keto cookie.
In the original version, the cookie is offered to bake with chocolate, I did not add it, because I was going to give the cookie to a child who has not tried chocolate yet. The sweetener “Sukrin Melis” 30 g is also indicated there, but I replaced it with 4 g of erythritol. Another tip: if you have oil stored in the refrigerator, remove it in advance to warm it up to room temperature.
Basic keto cookie recipe
So, we mix all the dry ingredients with a whisk:
- Almond flour 110g (I had 100)
- Coconut flour 20 gr
- Psyllium 20 g (I have psyllium with Iherb, if you need a name and details, ask in the comments, I’ll show you the package)
- Baking powder 5 g (I didn’t weigh it, honestly, half a packet of Dr Oetker)
- Erythritol with probiotic (Prebio Sweet) I added 4 grams of my own free will, stevia and analogs will work too, I’m sure
- Spices to taste, I added cinnamon, but cocoa, chocolate, salt, ground cloves … I think everything will work.
We turn on the oven for 180 gr.
Put the rest of the ingredients in the mixer bowl at speed 3 out of 4:
- Vanilla extract about half a teaspoon
- Butter or coconut oil 80 g at room temperature, I had coconut on hand
Then she began tossing the dry mixture to the egg-oil mixture with a spoon. The mixer instantly mixed everything, the dough turned out to be very convenient for sculpting, does not stick to hands. The entire test preparation process took no more than 10 minutes.
Then I took pieces of dough from the mixer bowl with a spatula and sculpted them into round cookies. The child saw enough in one cartoon that the cookies should be exactly round and ugly and I wanted to make him just that. Next time I’ll add some more nuts, maybe. You can watch the cartoon at the end, suddenly it will inspire you too.
In the top–bottom mode, baked for exactly 15 minutes on a silicone mat.
I am very pleased with the result, the cookies quickly disappeared from the can. It turned out a little dry and a little cracked. This could have happened due to too high a temperature, I will try to reduce it next time.
Option 2.0: keto cookies without psyllium
On the second try, I had baking soda instead of baking powder, for the scent of the zest of half a lemon. She did not add the cherished psyllium. After all, not all cookie lovers have it.
I also changed the temperature and time by 170 degrees for 18 minutes. I liked the result even more! The cookies are not cracked at all. I will continue to check curious keto recipes, which is what I wish for you!
